A Tomato A Day….

How about these AWESOME tomatoes?  I gather a huge bowl like this every other day.  I am swimming in tomatoes.

And what is the cause of this tomato extravaganza?  I believe it’s two words – chicken poop.  Organic chicken poop cured over the winter and applied to the beds in the spring.  I’ve been growing tomatoes in this yard for 23 years and NEVER had plants this huge or prolific.

It’s certainly not the high quality of the plants.  Many were labeled heirloom when we got them in late May, but hey, they can’t be too fancy because they came from Home Depot.

I eat at least one tomato sandwich a day and COULD NOT be happier.  Very Excellent Husband Don continues to ask, “Want some veggie bacon?  Some lettuce? An egg, maybe?”

“No!” I patiently (haha) reply.  Just tomato, Hellman’s mayo, salt and pepper on whole wheat bread.  Anything else is just WRONG.

But I need to use WAY more tomatoes than one sandwich’s worth a day.  What’s a girl to do?  Here’s what….

Emeril Lagasse’s Panzanella Tuscan Bread and Tomato Salad – I love this.  I could actually be IN LOVE with this.

Eat as many home-grown tomatoes as you can right now.  In the middle of winter when there’s not a good one to be found, you’ll remember how perfect they were. And be very, very happy.
