Love This Salad!

It’s spooky, but Nancy and I seem to live parallel lives.  One of the reasons we started this blog was because over and over again we found ourselves looking for solutions to similar problems at the same time.

Anyway, I was looking for a new salad recipe a while back and found one that looked good on Food52, one of our favorite food sites.  So I whipped up the Arugula, Pear and Goat Cheese Salad with Pomegranate Vinaigrette and it was UNBELIEVABLY GOOD.  Crazy good.  Very yummy.

I made a mental note to tell Nancy about this yummy new find, but since it was only a mental note and not something I actually wrote down, I of course forgot.

Then not more than a week later, Nancy called one morning and said she just made THE MOST AMAZING SALAD the night before.

(Wait for it….)

Yep, same salad.

I made it again last night, and we were so hungry by dinner time this was the first photo I took….It’s that good.







Couple of notes:

  • This is not a cheap salad, and pomegranate seeds aren’t available year round, at least here.   I can find them sometimes at Costco, all cleaned up and ready to eat at a somewhat reasonable price.  The ones I used last night came from the deli section at Whole Foods and I’m too embarrassed to say how much I spent.
  • I’ve never seen pomegranate molasses in a jar at the store, but all you do is combine 2 cups of 100% pomegranate juice, 1/4 cup of sugar and 1/2 T. of  lemon juice.  Simmer that on medium-low heat, stirring occasionally, until the mixture is reduced to 1/2 cup of liquid.  It takes a while.  But it’s worth it.  (Oh, and you can drizzle this stuff on vanilla ice cream and it’s so good it will make your toes curl.)
So go ahead – when you deserve something extra good for dinner, give this salad a try.   (Unless you’re a goat cheese hater, and then I just can’t help you 😀 )  And then have a little pomegranate molasses drizzled vanilla ice cream for dessert.  I know you’ll love it.  I promise.

When I made this salad a week ago I was shopping at Sprouts and asked them if they had pomegranate seeds. The clerk looked at me like I was nuts.

One other great thing about pomegranate molasses – it keeps a long time. In fact, when I made my salad last week I used pomegranate molasses Joan (ever the refrigerator cleaner outer) gave me at Christmas time.

I make a similar salad– but no goat cheese and I blend 1/2 a cup of pomegranate arils into the dressing, which has the plus of leaving the fiber in the pomegranate and making the dressing thicker. I don’t mind getting the pomegranate seeds out of the fruit myself, that saves a little money and isn’t too hard.
