Killer Simple Tomato Sauce

Joan gave me beautiful basket of tomatoes from her garden. It was perfect timing because while poking around in one of my favorite food blogs, Food52, I came across a wonderful category called “Genius Recipes.” These are recipes by well-respected chefs from around the world that represent a different or unusual way of preparing something. The recipe that caught my eye was Marcella Hazan’s Tomato Sauce with Onion and Butter.

The recipe title says it all because that’s all it call’s for; tomatoes, half an onion and some butter.

The most time-consuming part of this recipe is skinning the fresh tomatoes.

The results? Simple, yummy, luscious. To show off this fabulously fresh sauce, I made “Light-As-Air Potato Gnocchi” from the September/October 2011 issue of Cooks Illustrated. It was the second time I’ve made this recipe in the last two weeks and both times the results were perfect. Unfortunately I didn’t get a picture of the gnocchi because Alan and I were busy gobbling it down before I remembered.

These are two absolute just the right recipes that will be going into my tried and true favorites collection!
